All you need to make my lemon gelato (which can be made in your ice cream maker) is lemon juice, lemon zest, sugar, heavy whipping cream, milk, and a dash of salt. No egg yolks needed!

Lemon Gelato Recipe
The recipe is very easy, and the end result is delicious. You will love the creamy texture and tart flavor of this gelato.
Preparation time: 30 minutes. Process time: 20 minutes plus freezing
- 1.5 cup Lemon Juice about 6 lemons
- zest from one lemon very fine
- 1.5 cup sugar
- 1.5 cup milk
- 1.5 cup heavy cream
- Add the cream, milk, lemon juice, zest, sugar, and salt together. Using a wire whip, mix until the sugar dissolves and is completely incorporated. (the mixture should thicken some)
- Pour the lemon mixture into a gelato or ice cream maker.
- Allow the mixture to freeze.
- When the gelato mixture has sufficiently frozen, place into a container and allow the lemon gelato to completely freeze.
- When it’s ready, scoop into bowls, cups, or cones to serve.

Yes, you can. The difference between the two machines is gelato is churned at a much slower rate than ice cream, incorporating less air and leaving the gelato denser than ice cream.
Storing Lemon Gelato
After the gelato is ready, with a spatula pour the mixture in an air-tight container. Place it in freezer for 4 hours for gelato, 8+ hours for firm one. Even straight from the ice cream maker, this lemon gelato is cool, bursting with citrus flavor, creamy and delish! It will last covered for about 4 weeks, yeah right, if it lasts that long. Cover well with a lid, foil or plastic wrap.
Lemon was my favorite since Italian lemons have such a strong taste. Any Gelato recipe tastes awesome when made with fresh tangy flavored fruits. You can try other ones like berry gelato, coconut flavored ones etc.

Choose lemons that are firm, but yield to gentle pressure, with a smooth, thinner skin. The lemon should not have blemishes, be pale or have any green; this indicates unripeness. Good lemons for juicing, should be heavier relative to their size.
It is much easier if you zest your lemons before cutting in half to juice them. Wash and dry lemons before zesting, and do not zest too far down, the white part, called the pith is bitter.
To get more juice from your lemon, try these ONE of these two tricks: 1) Place lemon on cutting board or counter and firmly roll with palm of hand until it starts to yield slightly
2) Place lemon in microwave for about 10 seconds, then roll and squeeze
