- Place the almonds in a large mixing basin, pour in the water, and cover with a cloth. Soak the almonds for a minimum of 8 hours and no more than 2 days.
- Drain the water and rinse the almonds in a colander. Fill the basin with water and pour it out.
- In a blender, combine the soaked almonds with 3 cups of filtered water. For a few minutes, beat on high speed until the mixture is smooth and creamy.
- Place the almond milk in a fine mesh strainer, mesh, or nut milk bag over a basin to drain completely. I drain it for approximately 5 minutes in a colander.
- Whisk in the sugar replacement, salt, and vanilla extract after the almond milk has been filtered and removed from the pulp. You may adjust the amount of keto sweetener and salt to suit your preferences.
- If preferred, use the almond milk right away, or pour it into a jar with a cover and keep it in the refrigerator. Before each usage, give it a good shake.
