Spanish tomato sauce, or salsa de tomate, is a flavorful sauce used in a variety of Spanish dishes. It’s slightly thicker than Italian tomato sauce and features a delicious blend of onions, garlic, and olive oil.

Spanish Tomato Sauce recipe

Prep. time: 15min. Cooking time: 25min. Yield: 8

Ingredients:

  • 24 tomatoes
  • 1 green bell pepper
  • 1 onion
  • 4 tbsp extra virgin olive oil 30 ml
  • 10 cloves garlic
  • 1 tsp sweet smoked Spanish paprika 1.15 grams
  • 2 tbsp sherry vinegar 15 ml
  • 4 tbsp finely chopped parsley
  • pinch sea salt
  • dash black pepper
  • dash granulated sugar

Instructions:

  1. If using fresh tomatoes, start by blanching them to remove their skins. Cut a small X on the bottom of each tomato, then place them in boiling water for about a minute. Transfer the tomatoes to a bowl of ice water, and once cooled, peel off the skins. If you’re using canned tomatoes, you can skip this step.
  2. Finely grate fresh tomatoes into a large bowl, you want to end up with about 5 cups of grated tomato, then mix together and set aside
  3. Finely chop 1 green bell pepper, finely dice 1 onion and roughly chop cloves of garlic
  4. Heat a large fry pan with a medium heat and add in extra virgin olive oil
  5. After 2 minutes, add in the onions, green bell pepper and garlic, mix together with the olive oil, after 5 minutes and the onion is translucent, add in 1 tsp sweet smoked paprika and sherry vinegar, give it a quick mix, then add in the grated tomato, season with sea salt, black pepper and a kiss of granulated sugar, mix together and simmer.
  6. If using canned tomatoes, break them up with a spoon as you stir.
  7. After 22 to 24 minutes and the tomato sauce has thickened up, add in finely chopped parsley, turn off the heat, mix together and remove the pan from the stove top.
  8. If you want a smoother sauce, use an immersion blender or carefully transfer the sauce to a countertop blender to puree it. Be careful when blending hot liquids – start slow and increase speed gradually.
