Keto Pumpkin Roll recipe Ingredients-
- 3/4 cup almond flour
- 1/4 cup coconut flour
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 teaspoon pumpkin spice
- 3 eggs
- 1 cup pure pumpkin puree
- 1/4 cup Swerve brown
- 1/4 cup Swerve granular
- 2 tablespoons sugar free caramel syrup
- 1 tsp. vanilla extract
Cream Cheese Filling–
- 8 oz. cream cheese, at room temperature
- 3/4 cup heavy whipping cream
- 1/2 tbsp. vanilla extract
- 1/8 tsp. sweetener of choice (to taste)
Directions-
- Preheat the oven to 350 degrees Fahrenheit. Butter the sides and line the bottom of a pan with parchment paper. Set aside.
- In a large mixing bowl, combine all of the dry ingredients (except the sugar).
- In a large mixing bowl , whisk together the eggs, brown Swerve, and granulated Swerve for approximately a minute, or until the eggs are foamy. Combine the pumpkin puree and the caramel syrup in a mixing bowl.
- Stir the dry ingredients into the pumpkin puree mixture over low heat until well combined. The dough should be easy to work with but not liquid.
- Evenly spread the dough on the baking pan (you should get a 9×12 rectangle). 15 minutes in the oven
- Remove it from the oven. Allow 15 minutes for cooling.
- Make the cream cheese filling while the cake is cooling. In a medium mixing basin, whisk together the whipped cream, cream cheese, syrup, and Swerve custard until peaks form. Allow the cream cheese to come to room temperature before spreading it evenly over the cake.
- Place the Swiss rolls on a baking sheet lined with parchment paper, and pour the cream cheese filling over the crust, fully covering it.
- Begin rolling out the dough one side at a time. Meanwhile, while you lay out the crust, remove the parchment paper. Cover the roll with Saran wrap once more to make it tight.
- Refrigerate the roll for 4 hours or until it is fully cold. If you’re planning ahead, wrap the sandwich in plastic wrap and freeze it for up to 2 weeks before serving. If you’re going to freeze them before serving, defrost them the night before.
- Serve with Swerve cake cream drizzled over top. Have a blast!

We removed fibre and erythritol, the primary component in Swerve, from the total carbohydrates since they don’t have the same impact on blood sugar as normal carbs. Once the sugar alcohols and fibre are eliminated, the net carbohydrates will drop dramatically.
