Ingredients

  • 2 leeks
  • 2-3 tbsp. butter
  • 1 cup heavy cream
  • 1 cup cheddar cheese
  • salt and pepper to taste
  •  fresh chives, finely chopped(optional)
  • 1 pinch ground nutmeg (optional)

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit (200 degrees Celsius) or turn on the broiler.
  2. Trim and thoroughly rinse the leeks. Cut stalks in half lengthwise and into 4-inch long sections.
  3. In a nonstick skillet, sauté leeks in butter over medium heat. Alternatively, you may cook them for a few minutes in gently salted water. If you use water, be careful to drain it completely before continuing.
  4. In a baking dish, place the leeks.
  5. In a saucepan, bring the cream to a boil. Reduce the heat to low and stir in the cheese. Stir until the cheese is completely melted.
  6. To taste, season with salt and pepper. Add nutmeg and chives, chopped (optional).
  7. Over the leeks, pour the cheese sauce. Bake for 15-20 minutes or broil until the dish has become a beautiful golden color, monitoring carefully.
