Every Thanksgiving, Low-Carb stuffing is a staple on the traditional American dinner table. Whether itâs on the appetizers table, or in the middle of a large, smothered turkey, stuffing is the âgo-toâ side dish when itâs time to serve up the meal. And, while some people donât think much of the stuffing, others consider it one of the most important parts of the whole meal!
Thanksgiving is just about the only time of year I cook a low-carb stuffing. Itâs also the time of year I end up eating a lot of carbs, whether Iâm eating at home or out with family and friends, so this year Iâm making a special low-carb stuffing.
Low Carb Stuffing for Thanksgiving-

- 1Â large headÂ CauliflowerÂ (cut into small florets)
- 1Â largeÂ OnionÂ (sliced)
- 1/4Â cupÂ chopped nicely Celery stalks
- 2Â clovesÂ GarlicÂ (minced)
- 1/4Â cupÂ Olive oilÂ (can also use butter or ghee)
- 1/2Â tspÂ Poultry seasoning
- 1/2Â tspÂ Dried thyme
- 1/2Â tspÂ ground sage
- 1Â tspÂ Sea salt or to taste
- 1/4Â tspÂ Black pepper
- 2Â tbsp. chopped parsleyÂ
- 1/4Â cupÂ chopped Pecans
- Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius). Line a baking tray with parchment paper, or line with foil and grease well. The recipe makes enough stuffing for a main dish as well as a side dish that can be baked in the oven.
- In a large mixing bowl, combine together the chopped cauliflower florets, onions, celery, and garlic. Toss with olive oil, poultry seasoning, sage, thyme, sea salt, and black pepper.
- Now pour the mixture in a single layer on the lined baking sheet. make sure that there are as many of the cauliflower florets and onions in contact with the pan as possible. Roast in the oven for aboutÂ 15 minutes or until the onions are soft and cauliflower is starting to brown a little.
- Now, add the fresh parsley and pecans to the pan, and stir everything together. Roast forÂ 10-15 more minutes, until the pecans are lightly toasted, cauliflower is well browned, and onions are starting to caramelize. and become soft.
