Succulent for Thanksgiving? This low carb stuffing is the perfect addition to those who want a low carb Christmas dinner, or perhaps to be low carb for the entire year. The stuffing is not so much for the low-carb diet as it is for those who are looking for a healthier alternative for the holiday.
Every Thanksgiving, Low-Carb stuffing is a staple on the traditional American dinner table. Whether it’s on the appetizers table, or in the middle of a large, smothered turkey, stuffing is the “go-to” side dish when it’s time to serve up the meal. And, while some people don’t think much of the stuffing, others consider it one of the most important parts of the whole meal!
Thanksgiving is just about the only time of year I cook a low-carb stuffing. It’s also the time of year I end up eating a lot of carbs, whether I’m eating at home or out with family and friends, so this year I’m making a special low-carb stuffing.
Low Carb Stuffing for Thanksgiving-

Thanksgiving stuffing may still be the best part of the meal. Isn’t there a whiff of bacon, sage, and apples drifting through the house? This low-carb stuffing is tasty, rich, and gluten-free. Indeed, Happy Thanksgiving!
- 1 large head Cauliflower (cut into small florets)
- 1 large Onion (sliced)
- 1/4 cup chopped nicely Celery stalks
- 2 cloves Garlic (minced)
- 1/4 cup Olive oil (can also use butter or ghee)
- 1/2 tsp Poultry seasoning
- 1/2 tsp Dried thyme
- 1/2 tsp ground sage
- 1 tsp Sea salt or to taste
- 1/4 tsp Black pepper
- 2 tbsp. chopped parsley
- 1/4 cup chopped Pecans
- Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius). Line a baking tray with parchment paper, or line with foil and grease well. The recipe makes enough stuffing for a main dish as well as a side dish that can be baked in the oven.
- In a large mixing bowl, combine together the chopped cauliflower florets, onions, celery, and garlic. Toss with olive oil, poultry seasoning, sage, thyme, sea salt, and black pepper.
- Now pour the mixture in a single layer on the lined baking sheet. make sure that there are as many of the cauliflower florets and onions in contact with the pan as possible. Roast in the oven for about 15 minutes or until the onions are soft and cauliflower is starting to brown a little.
- Now, add the fresh parsley and pecans to the pan, and stir everything together. Roast for 10-15 more minutes, until the pecans are lightly toasted, cauliflower is well browned, and onions are starting to caramelize. and become soft.

The favorite & tastiest part of turkey day is the stuffing, and its a promise no one will even miss the grains or carbs in this flavorful stuffing. this is low carb which anyone on diet can eat without having guilt.
This keto stuffing recipe has a vegetarian option, vegan option, and a dairy-free option. so, its a all in one success recipe. It’s different, but still delicious, and non-keto dieters wouldn’t bat an eye at this. If you prefer a softer stuffing, keep this in the oven for a few more minutes so the cauliflower won’t have as much texture.
Half the quantity of celery root may be replaced with 3–4 stalks of celery; 12 pound of root can be replaced with 3–4 stalks of celery.
