  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

  • 1/4 teaspoon ground nutmeg
  • 1/2 cup vegetable oil (or melted butter)
  • 1/2 cup brown sugar
  • 1/2 cup  granulated sugar
  • 2 large eggs, at room temperature
  • 1/4 cup unsweetened applesauce
  • 2 teaspoons pure vanilla extract
  • 3 cups shredded zucchini
  • optional: 1 cup semi-sweet chocolate chips or chopped nuts, raisins, cranberries etc


  • Preheat the oven to 350˚F. Prepare two 8×4 loaf pans with parchment paper or spray with baking spray. Keep aside.
  • In a large bowl, vigorously whisk together the flour, baking soda, baking powder, cinnamon, and ground nutmeg. Put aside.
  • In another large bowl, whisk together the sugar, eggs, vanilla, and salt. Stir in the drained & grated zucchini and then the melted butter.
  • Add the flour mixture, a little at a time, to the sugar-egg-zucchini mixture, stirring regularly.
  • Add the dry ingredients to the wet mixture. Add the sliced walnuts or cranberries and raisins and mix till just combined.
  • Divide evenly among the prepared pans and bake for 55 minutes or until a toothpick comes out clean.
  • Cool in the pans for 5 minutes, remove from the pan, and cool on a wire rack.
  • Slice and serve warm!
