1/3 cup + 2 tablespoons (53 g) all purpose gluten free flour

 2 tablespoons (18 g) cornstarch

1/4 cup (50) granulated sugar

1 teaspoon baking powder

1/4 teaspoon kosher salt

1 teaspoon ground cinnamon

Neutral oil or canola oil, for frying

1/4 cup + 3 tablespoons (3 1/2 fluid ounces) buttermilk, at room temperature

1 egg at room temperature

1 large, firm apple, peeled, cored and diced

For the glaze

1 cup (115 g) confectioners’ sugar

1/2 teaspoon ground cinnamon

Lukewarm water, as necessary


  1. Toss the gluten-free flour, sugar, baking powder, and salt together in a large mixing basin. Stir in the chopped apple pieces into the dry ingredients’ mix until everything is well combined.
  2. In a Dutch oven, pour approximately 3 inches of neutral oil and heat to 350°F.
  3. As the oil gets heated up, whisk together the buttermilk and egg in a separate dish, then pour it into the apple mixture until totally incorporated.
  4. Now when the oil gets nicely heated, scoop 1/4 cup of the batter into the hot oil and carefully drop it in.
  5. Fry the fritters in batches for 2 to 3 minutes on each side, or until golden brown. Remove them from the oil and put them on paper towels so as to let them drain and cool.
  6. Repeat until all of the batter has been utilized.

Make the glaze while the apple fritters are cooling. In a mixing dish, combine the confectioners’ sugar, cinnamon, and warm water. If necessary, add a bit more of water until you reach the desired consistency.
